A low carb diet typically means lots of salad and for me I need a good dressing or it gets really hard. I also prefer I a nice creamy dressing. These recipes for ranch and creamy pesto dressings both start with the same base and then just change up a couple of the recipes. These have made my low carb, salad eating lifestyle so much easier! Keep in mind that the pesto does have a tiny but of carbs (2 grams per tablespoon). Another great thing about homemade sauces is you get to add seasonings to taste. So even though I'm giving you exact numbers in these recipes remember that you can add as much or as little seasoning as you'd prefer.
Ranch and Creamy Pesto Dressings
Base:
2 1/2 - 3 cups homemade mayo or your favorite low carb store bought
1 cup sour cream
pinch or two of salt
Ranch Dressing:
To half of the base add:
1 tablespoon garlic powder (or to taste)
1 tablespoon dried dill (or to taste)
a pinch of salt to taste
fresh ground pepper to taste
Whisk together and add a little milk, cream or water to thin to your preferred consistency. Store in the fridge for up to 10 days.
Creamy Pesto Dressing:
To the half the base add:
4 tablespoons prepared pesto, more or less to taste(I like the Kirkland pesto from Costco)
pinch of salt to taste
